Happy Monday everyone! I wanted to talk a little about my weekly meal prep with you guys! We are a family of three, with both parents working full time and on complete opposite schedules. So meal times are often spent apart and I am usually never here for dinner. On one of my off days, I spend time prepping dinners for the week ahead. I take inventory of the pantry and the fridge/freezer and make my meal plan the day before. I also make a habit of grabbing an extra pack or two of meat when we go to the commisary or Walmart for grocery runs, so I always have something in my back pocket ready to go. Here's what I made this week!

Ham, Stuffing, and Mac and Cheese
One of the meals we have for dinner the night of meal prep, so there are leftovers of that meal as well. I bought these great glass food storage containers at Sam's Club, I'll attach the link for both sets below!
Hawaiian Ham & Cheese Sliders
1 pkg of Kings Hawaiian sweet rolls
1⁄2-3⁄4 lb of sliced ham
1⁄2-3⁄4 lb swiss cheese
1 stick melted butter
1 tbsp Dijon mustard
1 tbsp poppy seeds
2 tsp minced dried onions
2 tsp Worcestershire
2 tsp brown sugar
Slice your buns lengthwise with a serrated knife to separate the tops and
bottoms. Set the bottoms in a 9x13 pan and layer your ham and then your
cheese. Top with your top buns. Stir together the remaining ingredients and
use a pastry brush to brush over the buns. Make sure to stir your sauce with
the pastry brush before adding to the buns to get the all the ingredients mixed
evenly. I also brush a little directly onto the cheese. There is going to be a lot
of sauce, but this is ok, it’s going to be delicious! Cover with foil and cook at
350 for 12 minutes and then remove the foil and bake until the tops are toasty.
Sloppy Joes
2 lbs ground beef
1 16-20 oz bottle of ketchup
1 red or green pepper, diced
1 onion, diced
Brown sugar
Salt & pepper
Onion Powder Garlic Powder
Cinnamon
Hamburger buns
Brown your meat and season with salt, pepper, onion and gralic powder and drain,
saving a little bit of grease in the pan. Saute your peppers and onions in the pan until
they start to soften. and add your meat back into the pan. Add in about 1⁄2-3⁄4 of your ketchup, 2 tablespoon of brown sugar, other seasonings and a pinch of cinnamon. Add in more ketchup and more brown sugar if needed, and simmer on low. Add in about 1/4 cup of water to combine. The brown sugar and ketchup should make the mixture nice and caramelized and delicious for your sloppy joes! Serve on hamburger buns.
