Salmon Air Fryer Bites with Dipping Sauce

Saturday was new recipe day! I spent all day in the kitchen cooking up things from my New Creation list and some things that just sounded good to make that day. I made some gluten free things for my brother, tried focaccia for the first time, and tested out some other new recipes and it was a very successful day in the kitchen!
For dinner, Jack and I went to Publix and picked out some beautiful salmon filets. I couldn't decide how I wanted to make them, so I asked Jack if he wanted to bake them whole in the oven or chunk them up and air fry them. He chose the air fryer and it was a great decision! I've listed the recipe below. You can change up the spices and make this however you want, but this turned out amazing and we will definitely make it again. And yes, we ate on Disney plates and we continue to do so for forever.


For the salmon bites
2 salmon filets, remove skins if still intact and cut into large chunks
Olive oil
Salt & pepper
Paprika
Garlic powder
Onion powder
Cayenne pepper
White pepper
Small spoonful of truffle mayo (optional)
For the dipping sauce
Mayonnaise
No sugar added sweet relish
Paprika
White pepper
Garlic power
Onion powder
Cayenne pepper
Dillweed
Parsley
Add the salmon and all the other ingredients for the salmon bites into a bowl and toss or use your hands to evenly coat the salmon. Air fry at 400 flipping halfway through for about 15-16 minutes, until cooked and starting to char a bit on the edges. You can also bake these if you don’t want to air fry them.
For the sauce, just mix the ingredients together and be sure to taste and adjust seasonings to your liking.
Serve with your favorite side dish! We had fried cabbage.
