Cheesy Bacon Potato Wedges with Garlic Ranch Dipping Sauce

Check out these potatoes! So much flavor and just plain delicious. Something a little different than just a french fry or baked potatoes. They are a great side dish or party appetizer for game day! Try these out next time you're craving some potatoes and something maybe a little different than your go to potato dish.
Cheddar Bacon Potato Wedges with Sour Cream Ranch Dipping Sauce
5 Russet or Yukon Gold potatoes
Oil
Salt
Pepper
Paprika
Onion Powder
Garlic Powder
Shredded colby jack or cheddar cheese
Green onions, sliced, tops only
8-10 slices of bacon
Sour cream, 1 small container
Heavy cream
Ranch powder
Preheat your oven to 400 degrees. Line a baking sheet with foil and layer your bacon on the pan in a single line and cook for 15 or so minutes or until your done to your liking. You can also cook your bacon on the stove if you prefer. When done, set the bacon on paper towels to get off any excess grease. Then once slightly cooled, chop up your bacon with a knife or some kitchen scissors.
For your dipping sauce, take your sour cream and place it into a bowl. Add some ranch seasoning, garlic powder and some heavy cream and stir to combine. Taste and adjust the seasonings as needed and add more cream if it’s too thick. Place in the fridge to chill while you cook your potatoes.
For the wedges, peel your potatoes and cut them in half lengthwise and then cut into wedge slices, not too thin or too thick. Put them in a large bowl with some oil and some of all of the seasonings and season to your liking. Mama likes things seasoned well so I used plenty of everything, just make sure not to over salt them. Line a large baking tray with a silicone mat or parchment paper and bake for 25-30 minutes or until they start to crisp up and are soft enough that a fork goes through easily.
When the potatoes are ready, pull them out and make sure they are crisped up and don’t need to be flipped. If they still need to cook, flip them over and put them back in the oven for a few more minutes.
If they are ready, top them with some shredded cheese and your bacon and put them back into the oven for a few minutes just to get the cheese all melty. Pull them out and the top with your green onion and some of your dip.
