One of my favorite dinners to make, is this different, slightly easier version, of pot pie. It is so delicious and herby and flavorful! And instead of making it into a pie, it's sort of a deconstructed pot pie served with the biscuits. I just bought the yummy, flaky grands biscuits to save on a little time, but you can certainly make your own!

I just start out with some chicken, I had some leftover boneless chicken thighs, so I used that. Diced those up along with some celery and onion. Cooked my chicken and then sautéed my veggies in butter and threw in some garlic towards the end of sautéing. Mixed in a good amount of flour and then add in your chicken broth or stock. And then I add in some heavy cream. I also add a bag of frozen peas and carrots. Add your chicken back in to the mix.
I season this with salt, pepper, garlic, and lots of herbs. I used parsley, rosemary, sage, and thyme. Let it bubble away and do its thing and it turns into a thick and delicious pot pie filling!
